Olive oil is a monounsaturated fat. Monounsaturated fats reduce bad cholesterol, especially when used in place of saturated and trans fats which raise bad cholesterol, such as hydrogenated palm oil (which is often labelled as vegetable oil on foods) and many other types of cooking fats and oils.
