Sunset Mallee Olives EVOO is extracted in a modern 2 tonne/hr Pieralisi continuous processing plant. Below is a brief description of the process.
STEP 1 - DEFOLIATING AND WASHING
The freshly harvested olives are placed on a conveyer belt where leaves are first removed through powerful airflow generated by an electric fan. The washer then removes any remaining debris from the olives and the clean sparkling olives then travel to the crusher.
STEP 2 - CRUSHING
The olives enter the purpose built crusher where they are crushed to produce an olive paste. The paste then travels to the malaxers.
STEP 3 - MALAXING
This is the temp controlled stirring of the olive paste. Malaxing will join the microscopic oil droplets in the olive paste together, so the oil can be separated. The paste is now pump'd into the Malaxation tanks and water flows through the cavities, heating the olive paste slightly without contacting it. At the same time, the paste is stirred. The malaxers are controlled at a digital monitoring station, where the temperature can be adjusted. CLICK TO CONTINUE >
