HOW IS OLIVE OIL EXTRACTED FROM OLIVES ?

Olive oil is extracted by pressing or crushing the olives, and then separating the desired olive oil from the rest of the olive fruit. When producing extra virgin olive oil, no other ingredients are added in this process.
 
In modern times the traditional olive presses which required manual labour input have given way to mechanical processing equipment, referred to as continuous processing plants, which process many tonnes of olives per day.
 
Modern processing plants crush the olive fruit into a paste and then 'spin' the paste, the resulting centrifugal force separates the oil from the rest of the fruit.
